if anyone needs the most simple, easy, heavily requested meal that literally takes 20 minutes on the stove it is what i casually refer to as white chicken chili:
1 lb ground chicken
1 can black beans - drained
1 can cannellini OR kidney beans - drained
1 can southwestern corn, half drained
1 can fire roasted tomatoes
2 packets of white chicken chili seasoning from mccormick
brown the ground chicken with one packet of the seasoning and break the meat up to the desired consistency; add the drained beans once it's fully cooked, then the corn & tomatoes and the second packet of seasoning -- cook thru. i use my dutch oven for this on the stove top, but you could use any heavy duty pot. if you are not a fan of spicy, just do one packet of seasoning!
and that's all she wrote folks - super fast, super filling, high protein, high fiber and if you feel so compelled you can pop one of the uncle ben's rice things in the microwave to serve with it. or chips and fixings
I planned to leave a comment about the ‘gift stash’. If you have a Trader Joe’s near you, their Honeycrisp Apple candle is yummy! And, in the spring/summer it’s the grapefruit for me.
I always have a couple Simplified notepads (square ones), mini notebooks & page markers on hand. Page marker + book (or gift card) make a great gift.
do not sleep on the tomato leaf candle if you can get it. i've been known to consider throwing hands to get a few extra - usually released in May i think!
